I restarted C25K for what seems like the 100th time today. Life always seems to get in the way of me completing the program. I love it but I also am always quick to put working out on the back burner. I desperately want to compete in a 5k and I know they do a 5k at the Relay for Life I am doing with my former students in April. I have done zero working out in the last 6 months so I am proud of myself for finishing day 1. I got 1.71 miles in 32 minutes.
I weighed myself this morning and plan on staying off the scale for the next 30 days. I weighed 201.4 lbs.

Disclaimers, Advice, & Whatnots
Whole 30 encourages looking at the source of your proteins and eating certain foods organic. We are choosing to do what we can but in the reality of it eating meat can be expensive. We purchase most of our meat at Sam's club. Sometimes buying $25 of pork loin seems kind of redonkulous for 2 people but we split it into 3 sections freeze 2 parts and the one section we use will last us 3+ meals. As a result I am not going to always be super specific on the weight of the meat in the recipe but if you need further clarification just let me know and I will ask Adam to give me an estimate. Someday when I have more money we will eat better meat and veggies.
We have taken to reading every label of everything we buy. Do you know how many different places we had to go to find Chirizo without soy or wheat? The answer...3. We bought a huge thing of Chili powder from Sam's club only to get home and realize it has wheat in it. I didn't even think to read the label until we were cooking dinner. We luckily still had some Chili powder from Penzey's and it is all good. We plan on making a trip to Penzeys this next weekend. We love their spices best anyway. If you don't have one near you fear not you can order online.
We are ok eating the same meals over and over. Most of our dinner meals will make 3-4 meals. If you don't eat like that way divide the recipe or cook and freeze for a later meals. I couldn't stand looking through recipes online that cook food for one person. I can not afford to eat that way. We need to make the most of each meal and it's ingredients.
We started on a Monday so we can prep our foods for the first part of the week on Sunday. Since eating clean takes a lot of actual cooking work we wanted to set ourselves for success.
Adam is allergic to fish but can eat shellfish so you won't find many fish recipes. I am allergic to blueberries so you also won't find any recipes that include them.

1 Pork tenderloin (We bought a huge one from Sam's Club and cut it in 3rds so we froze the rest for future meals.)
1 jar Herdez Verde Salsa
Equal amount of water.
1 can RoTel Tomotoes & Chilis. (We ended up buying generic because they didn't have RoTel but make sure to look at the label to see what it contains. Some brands had nasty fillers in them)
Butter Lettuce
Avocado
Put meat, salsa, water, and RoTel chilis in crock pot set to low. Go to work. When you get home pull the pork out. Shred the pork and throw back into the pot.
When ready for dinner use butter lettuce as a shell and add meat, and avocado slice. I also have a jar of Herdez Regular Salsa I will add to mine. Herdez seems to be one of the only clean brands of salsa here. We ended up buying generic tomatoes & chilis because they didn't have RoTel. Make sure to look at the label to see what it contains. Some brands had nasty fillers in them and since I couldn't look at a can of RoTel I don't know if it is an offender.

Personal serving of chicken or shrimp (I am doing shrimp and Adam is doing chicken)
Salad greens (I am using a spring mix with added fresh spinach and Adam is using romaine)

1/2 cup of fresh orange juice
1/4 cup of fresh lemon juice
1 1/2 cups of extra virgin olive oil
1/4 cup white balsamic
salt and pepper to taste
Put everything but the olive oil in a food processor . Turn on the food processor and slowly pour the olive oil in. Put in a storage container and use throughout the week.
